Jim Bondly is a local friend and customer who has been learning from some cutting-edge medical doctors about the importance of food as medicine and noticing where tradition medical answers are insufficient. This video introduces his latest journey into using food as medicine. The video also gives you a glimpse of the gardening and canning work that his wife Linda does in an inspiring way.
Jim is combining real food eating with intermittent fasting for 40 days toward improving his health. Hearing Jim explain is helpful and practical and thereby inspiring. The approach is basically eating more meat and eggs, some vegetables, and only the best quality foods in a gently narrowing window of time each day. Like the carnivore diet, this type of eating is known to reestablish immune systems and reverse diabetes and much more.
In Michael Pollan’s “Defense of Food” book, he explains how the American food system has been focused on quantity and price rather than quality. He then makes the case for eating only high quality food and the scientific case for eating less. That points to slowing aging, prolonging lifespans and cancer prevention. Since overeating promotes cell division and stifles the production of free radicals which curbs inflammation and reduces the risks of most Western diseases. Jim Bondly’s experience is an interesting “laboratory” experiment demonstrating how practical and doable eating right can make food really do its job as medicine.
